Moist, Tender and Delicious Loaf-Pan Chicken


 Photo Name This great loaf-pan chicken recipe is adapted from one by champion pitmaster, Chris Lilly, from Big Bob Gibson's BBQ. The original is cooked in a smoker, but the same technique can be easily modified for the oven.

Slow-roasting in such a moist, flavorful environment really produces a chicken that's very tender and juicy. There are also countless ways this recipe can be tailored to your personal tastes by simply changing the spices in the rub. Enjoy!
